Recipes: Easter Bunny Cakes

We have tried many versions of this beloved tradition for Easter. This year we used two cake recipes from our trusted Betty Crocker’s Picture Cook Book: Light Golden Cake and Dark Devils Food Cake. We used a 9” layer cake pan for each bunny and cut it in half and again as the photo to create a head and a tail. For the Light Golden Cake, we used Dark Chocolate icing store-bought from Duncan Hines. The Dark Devils Food Cake iced with Fluffy White Icing also from Duncan Hines and covered with toasted coconut or flakey coconut to add texture. The grass was made with coconut soaked in green dye and milk then dried on the paper towel for 2-3 hours. Note: depending on availability, we have made with box cake mix and premade icing or all home-made or as above.
