Recipe: Potato Carrot Soup

Ingredients:

2 Potatoes

4 Carrots 

1 Medium Onion

1 Garlic Clove or ¼ -⅛ teaspoon Garlic Powder

48oz Chicken Broth 

2 tablespoons Butter 


Instructions: 

  1. Gather your ingredients 

  2. Peel and cut potatoes and carrots, cut the onion as well. You can cut them smaller or larger, whatever you decide, since we will be puréeing it later. 

  3. Melt the butter on medium-low 

  4. Add carrots, garlic, onion and stir more or less until translucent

  5. Add the broth and potatoes and increase the heat to medium-high, bring to a boil. 

  6. Then lower the heat and simmer for 15 minutes or until the potatoes and carrots are soft enough so that they can be pierced with a knife. Do not let them overcook. 

  7. Remove from heat and purée in a blender or with an immersion blender, working in batches if necessary. 

  8. Enjoy your soup with friends, family, or just with your favorite movie or a good book!
